Super Pumpkin Soup to Strengthen the Body

Ingredients:
1 Hokkaido pumpkin
1 onion
2 Tbsp of brown rice vinegar
1 Tbsp of white tahini
200 ml of rice/oat or almond cream
1 cup of water
1 Tbsp of Tamari
2 tsp of paprika
1 tsp of ground cumin
1 tsp of dried herbs (mix of: rosemary, savoury, thyme, oregano, marjoram, parseley)
2 Tbsp of olive oil
pinch of sea salt & black pepper
Directions:
Peel the onion and the pumpkin and cut into bite-sized pieces
Meanwhile, heat the olive oil on a pan. Whenever hot, add the onion with a pinch of salt. Cook until translucent.
Add the pumpkin and add a pinch of salt. Cover with the lid and let it cook, in a medium heat, until tender. (don’t let it dry, if necessary add a little bit of water). Approx. 10 min.
Add the paprika, dried herbs, cumin, the tamari and a pinch of black pepper. Stir well.
Add the plant-based cream, the tahini and the water. Stir until every is well mixed. Let heat before it reaches boiling temperature. Turn off the heat.
Add the brown rice vinegar.
Blend until smooth and creamy.
Top with pumpkin seeds.
If the soup gets to thick add more water.
Themes and Variations
You can use a butternut squash or winter squash.
Instead of using plant- based cream, you can use soy, oat, rice or almond milk and omit the water.
