Ingredients:
1 small can of white beans
1 onion
1 big portobello mushroom
1 medium courgette
1 teaspoon of Himalayan salt/ sea salt
a pinch of Black pepper
1 tbsp of dried basil
1/4 of a lime juice
1 tsp of lime zest
Olive oil
1 tbsp of light tamari
Coriander
Directions:
Pre-heat the oven at 180ºC.
Cut all the veggies in chunks.
Drain the beans (wash them with water if necessary) and spread it on the tray, alongside with the veggies.
Add the olive oil, the salt, the pepper, the tamari, dried basil, lime juice. Mix everything.
Let it roast for 20–25 minutes until tender.
Remove the tray from the oven. Taste to check the seasoning and adjust as needed.
Add the fresh coriander and lime zest on top.

You can swap the lime for lemon.
