Late Summer Banana Bread
I know that late summer is around the corner when I suddenly start having the feeling that I want to bake something. Days are still hot, but mornings and nights start to get chilly, and all I want is a bite of something warm. This banana bread is perfect for the late summer season: it’s light but also warm, naturally sweet but also balanced, crispy on the outside and fluffy on the inside. Nourishing and super easy to digest. Now, you know why after eating this, you will feel so great :D

Interesting Note: Bananas have high levels of tryptophan, an amino acid, which is converted into serotonin in your body.

Ingredients:

  • 1/3 cup of virgin coconut oil 

  • 1/4 cup of coconut sugar 

  • 1/4 cup of agave syrup 

  • 2 tbsp of brown rice protein powder 

  • 4 eggs

  • 3 big bananas

  • 2 tbsp of almond milk or soy milk

  • 2 tsp of vanilla extract 

  • 2 cups of oat flour 

  • 1 cup of gluten free flour 

  • 2 tsp of baking powder 

  • 1 tsp of baking soda

  • 1 tsp of sea salt 

  • 2 tsp of ground cinnamon 

  • 1 tsp of ground cardamom 

Directions:

  1. Preheat the oven to 180ºC (340F) fan setting.

  2. Place everything into a blender until everything is mixed together.

  3. Once the mixture is smooth, spoon everything into the lined loaf tin.

  4. Cook for 40 minutes until golden and a knife inserted in the centre comes out clean – if it doesn’t, place back in the oven for 5-10 more minutes.

  5. Once cooked, remove from the oven and leave to cool a little before enjoying.


Themes and Variations

If you want a vegan version, you can swap the eggs for flax seed eggs.
