Breakfast Cookies
These cookies are crunchy and not too sweet, perfect to eat during breakfast or as a light sweet snack during the afternoon. They're so simple to make and to pack as a on-the-go option. Oats are such a breakfast staple and have a lot of benefits. The hazelnuts make a delicious nutty flavour, besides elevating the nutritional value for the body. Nuts are highly nutritious and tend to warm the body. They are ideal for building up energy (qi) and yang in the body. Nuts  are also great to quickly balance energy deficiencies. 
Naturally sweet foods are especially useful for relaxing and balancing the body.

Ingredients:

  • 1 cup of porridge oats

  • 1/2 of (50% of hazelnut flour + 50% of gluten-free purpose flour). If you eat gluten you can use all purpose flour.

  • 1/2 tsp of baking powder 

  • 1/2 tsp of bicarbonate of soda 

  • 3 tbsp of coconut oil 

  • 5 tbsp of maple syrup 

  • 1 tsp of cinnamon 

  • 1/2 of plant-based milk (I used oat milk)

  • Pinch of sea salt

Directions:

  1. Preheat the oven to 180ºC (355F), fan setting.

  2. Place the oats, flour, baking powder, bicarbonate of soda and cinnamon into a large bowl and mix well to remove any lumps.

  3. Add in the maple syrup, melted coconut oil, plant-based milk and sea salt and mix until well combined.

  4. Scoop out balls using a spoon onto a lined baking tray. These cookies are much easier to shape when using a spoon, since the mixture is moisty.

  5. Bake for 30 minutes until golden.


Especially Good For

Lack of appetite, anyone with fatigue and exhaustion (general qi, blood and yang vacuity) anyone experiencing, anyone recovering after an extended chronic draining illness, someone with general physical lack of strength.

 

TIP

These are not recommended for those who are experiencing a lot of heat in the body, like fever, day sweats, dry mouth or constant thirst.
